Curriculum and pedagogy in culinary arts education : a course proposal Humeniuk, Lauri J.; Randle, Trevor J.
Abstract
The intention of this joint graduating project was to outline the need for a curriculum and pedagogy course in the culinary arts. We began with our own stories of becoming chef instructors and obtaining a Bachelor degree in Education and teacher certification in the province of British Columbia. Both of us found that conventional teacher education programs currently being offered did not include coursework that prepared educators to teaching food related programs that are offered in commercial teaching kitchens or cafeteria like settings. We surveyed the current literature of culinary arts education and determined from that research what was needed to be included in a curriculum and pedagogy course. As a result of our lived experience and our literature review we created a proposal for a course that incorporates specific curriculum and suitable pedagogical practices as recommended in the literature. The course is titled Curriculum and Pedagogy in Culinary Arts Education. We have suggested that it consists of five modules which include the role of culinary arts in public education, teaching methodology incorporating the liberal and vocational aspects of education, curriculum and course development in culinary arts, current developments and practice in culinary arts and creating pedagogical connections.
