Heat gently over gas until the mixture Is thick. Do not boil. Let It cool; Iben stir iu the whipped whites of two eggs. Add half a plul of whipped cream nud mix carefully. Put iuto u mold and set on ice to freeze. Honey Fudge.���P>oll together a-cupful each of sugar and milk nutll it forms a soft ball if tested In cold water. Add n cupful of honey and boll until the mixture can lie tested as before. Then add a nul of butter aud a tablespoonful of vinegar. Mix all together and pour into shallow tins tt* cool. Quite a variety of appetizing yet most nourishing dishes can be evolved with, the aid of Junket tablets. Chocolate Junket���Dissolve half a cupful of sugar in a quart of lukewarm milk. Melt two squares of chocolate. add half a cupful ot warm miik and bring fo the boil. Remove from tbe fir* Immediately snd add remainder of the milk, quarter tenspoonful of vanilla mid one dissolved junket tablet. Stir well sud pour Into small fancy cups to set Now take bult a cupful of thick crcuni, add a few spoonfuls ot sweetened milk and bent tiii quite stiff. Bent tho white ot oue egg till you can 'cut it nnd add slowly to the beaten cream. Four Hie cream mixture over the Junket just before serving and d*e> orate wltb crystallized cherries. Junket Wllh Coffee Flavor.���runr half n pint ot boiling water over two ounces of coffee. Take a quart of milk sweetened to taste: add the clear boiling coffee, which should make It lukewarm. Add one junket tablet stir weil nnd pour into a glass dish. Serve with whipped cream on tho top. Cocoanut Junket���Sometimes a little junket ls left over nnd is usually wasted. Here Is a nice way of using It: One cupful of cocoanut, one cupful ot enrd from which the whey has been poured, one cupful of cream, two yolks of eggs and one cupful of sugar. Place all in a saucepan on the fire and stir till thick; then pour Into a buttered file dish and bake slowly for ten minutes. Fruit Sandwiches. Fruit sandwiches are more generally used tban they used to be and are tn delicious that they ought to form a part ot every sandwich repast. They satisfy a natural craving for sweet? and are more wholesome and more easily made than cakes or candies. Dates can be made Into many savory pastes for sandwich filling. Make the foundation by stoning the dates aul running them through the meat chopper. To a pound of Ibis paste add the Juice of au orange and the pulp that squeezes out with it rub It smooth and spread between buttered bread. To a half cupful of dates add a quarter cupful of chopped English wa!m:t meats aud a teaspoonfnl of lemon Juice nnd spread between buttcre4 bread. Short Cuts. A quiet way to warm plates in cold weather is to dip tbem in hot water. Dry in a dish rack or wltb a towel. Invert the bandies of knives, forks and spoons in n pitcher of hot water to warm them. When covers lose tbe orginal knobs replace them with others tbat can be bought for 10 cents per dozen at a novelty store. Tree Temperature It is not shade alone that makes it cooler under a tree in summer. The coolness of the tree itself is to be considered, since its temperature is about forty-five. Fahrenheit, at all times, as that of the human body is a fraction more than ninety-eifjht degrees. So, it will be seen, a clump of trees cools the air as a piece of ice cools the water in a pitcher. It is for this reason that municipal experts contend that trees should be planted in the tenement districts of large cities. If, they reason, the air can be made cooler and purer by the trees, fewer children will die of heat ailments. As more children die during the months of June, July. Ladies' Aid Meets The July meeting of the Ladies' Aid of the Presbyterian church was held at the home of Mrs. Salmond. There was a large attendance from Courtenay and Saudwick. It was found that after paying allexpences $123.25 was cleared at the Strawberry Festival. It was decided to hold a Raspberry social the latter part of this month. The ladies also decided to give $500 towards the building of the new church at Courtenay. After the business meeting was over Mr. and Mrs. Salmond entertained everybody to a tempting repast set out on lhe lawn, the usual bountiful supply of strawberries being enjoyed by all. The ladies will meet next month at the I ome of Mrs, Lucius Cliffe. Automobile Dance The Automobile Association's first ball was held in the opera house on Tuesday evening, and was a delightful success. The music wus furnished by Prof. Harvey's orchestra, of Nanaimo, and was fully up to its usually high standard. The ladies were handsomely gowned, and the gentlemen well groomed, while the supper provided by Mine Host Fechner at the Biverside, was all that could be desired. There was not quite so good a crowd as was expected, but the hall was comfortably filled and was beautifully decorated with bunting, flags and streamers. The members had thoughtfully placed their autos at the disposal of their guests which was much appreciated.
