A QUESTION OF BACTERIA,

fur Ihe better quality nf the butler.
To dlscuver this germ and tu cultivate
it became the task of science. Dr.

combine tlle preservative qualities of
this wilh lhe agreeable qualities uf
others. Cream was obtained fur this
purpnse frum a dairy celebrated fui
lhe fine quality of Its butter, and was
fuiuid to contain when sour, large
quantities uf one particular kind of
bacterium, which was isolated and cultivated until purity wiisattained. Adding these again to sterilized cream, a
butter was made which proved to have
admirable qualities, hut In lack Ihe
keeping properties given by Ihe other.
Experiments were then continued until the precise proportions ill which the
two bacteria were to be used were dis*
covered, Once discovered, a aeieni ilie
pi-epariitinn frum the formula was
man ufacl ured by chemists and supplied
lo the Danish dairy, which thus lie-
came possessed of the means of making
the best butter in the wnrld. This
preparation was sold at first in liquid
form, hut is now put on the market by
a chemist named Wilier, at Unstuck,
ill the shape of a dry powder, Other
nations have adopted the process, Gt*r*
many in particular, Having already
discovered that the best butter wns
made from sutir crenin, the choice for
the dairyman lay between making It
with cream In which the acidifying
properties were accidentally antl cap-
ricinualy combined, and that in which
the proportions were precise and on
scientific principles. There seems, in
