The Poulsen simplex is the unique metrizable Choquet simplex with dense extreme boundary. I will explain how one can study the Poulsen simplex from the perspective of Fraisse theory for metric structures, and how many classical results about the Poulsen simplex can be recovered in this framework. I will conclude by mentioning how this point of view allows one to define and construct the noncommutative analog of the Poulsen simplex.
